Cerro Las Ranas, or "The Hill of Frogs" which is named for the thriving lagoon that sits high atop the estate in Ahuachapán, El Salvador, this coffee is a testament to the harmony between nature and meticulous craftsmanship.
Produced by JASAL—a dedicated family operation led by Jose Antonio Salaverria and his sons—every bean represents a legacy of precision. From year-round soil management to the final cupping evaluation, the Salaverria family ensures that only the highest standard of specialty coffee leaves their farm.
The "Honey Process" Difference
Cerro Las Ranas is crafted using the pulped natural process (also known as the honey process). By pulping perfectly ripened cherries and drying the beans while they are still coated in sweet mucilage, the coffee develops a distinctively syrupy body and enhanced sweetness.
The beans are dried slowly on traditional clay patios, where they are constantly hand-turned to ensure perfectly even drying and a clean, consistent flavor profile in every cup.
